All three Ambleside Distillers gins are really tasty, however, my favourite of the three was the Big Dry gin. Tiny Bear Distillery caught my eye this year with their unusual name and the unique branding of their 3 gins. I headed off to the distillery recently and was surprised to learn that they are making their base spirit from kale. Kale! Their 3 gins, ‘The Doctor’, ‘The Sailor’ and ‘The Gypsy’ are all 100% vapour-infused and have a different flavour profile and story behind them. If you want to leave it to the experts, relaxed licensing rules around the country make it easier to buy pre-batched negronis as takeaways at restaurants, as well as on bottle shop shelves. Mona led the charge during quarantine earlier this year with their takeaway ‘ Unholy Water’ double smoked negronis in miniature bottles, made using a recipe from last years’ Dark Mofo festival. While Adelaide Hills Distillery worked with with Lot. 100 to craft a fantastic 200ml takeaway Wattleseed negroni using their spirits and a wattleseed tea. At Fleet in Byron Bay, Australian flavour is underlined with a sharpie, by using Brookie’s Mac, a roasted macadamia and wattle-seed liqueur which scooped up a “ world’s best” gong earlier this year, in place of vermouth in their Mac-Eroni. While fellow Byron-region restaurant Harvest Newrybar sells a takeaway Jar-Groni using Brookie’s gin, Okar amaro and Adelaide Hills Distillery’s Rosso Vermouth. Four Pillars Distillery in Melbourne’s Yarra Valley took a punt by marrying Shiraz grapes with Rare Dry Gin. The result is a deep, reddish purple gin juice with a sweetness straight from the grapes.

Premium-and-above gin volume consumption has more than doubled in Australia between 2014 and 2019. IWSR data also shows that premium-plus gin volumes are expected to have increased by over 10% in 2020, and the segment will likely continue its growth trajectory over the next 5 years as well.The Geelong-based distillery has gone experimental with cherries, sourced from Spreyton in northern Tasmania.

Made by the good folk at the award-winning Bruichladdich distillery (better known for such delightfully smoky malts as ‘The Laddie Classic’) Botanist Gin is in keeping with the craft of Islay whisky. The third installment from the West Winds Gin in WA’s Margaret River is one to be applauded for being the first umami-based Australian gin. The Broadside Navy Strength Gin ( 58% ABV) gets its flavour profile from sea parsley, lemon verbena and Margaret River seawater. It’s bottled at navy strength so it’s not for the faint-hearted but makes a great dirty martini or simply sipped neat. Almost all Australian gin distilleries come up in the shadow of Four Pillars’ deathless popularity, both locally and abroad. It’s not unfounded, and Four Pillars is by no means overrated. Applewood Distillery pays tribute to Indigenous Australians by using only native ingredients, showcasing the many distinctive flavours of the great southern land with a great sense of vibrancy and flavour. The citrus and spice focus of Apple Distillery’s signature would elevate any G&T, but the unique Coral Gin is actually the best from this distillery.

The success of Australia’s gins, both domestically and abroad, has seen the industry undergo a 1,000 per cent growth spurt, according to the Australian Distillers Association (ADA).You knew Four Pillars was coming up sooner or later, and while this list isn’t ranked, we figured we’d highlight some of the lesser-known Australian distilleries first before getting to this industry behemoth. The Classic Dry Gin has won a Gold Awardat the Australian Gin Awards 2021 for the second time running. The signature gin uses modern distilling techniques and a smooth finish with subtle hints of citrus and thyme. While lesser men brush it off as a less complex spirit, gin deserves our full attention and there are the serious complexities and depth behind some of the best Australian gins. Blending the signature flavour of juniper berries with unique local botanical notes from each distiller’s region, the variations in these ingredients create a huge range of gins with very different profiles. So there’s plenty to keep you hooked on the local gin scene, whether the distiller has focused on using something like lemon myrtle, fresh green apple, Shiraz grapes river mint, blood orange, finger lime or even fresh ginger.
